Approximately 65% is destined for processing (frozen French fries, potato chips, and other dried products), 21% for fresh table consumption, and 14% for seed.<\/p>\n\n\n\n<p>Potatoes contribute to a healthy diet. They contain high amounts of starch and protein, and are rich in minerals. A medium potato (148 g) provides an excellent source of potassium (21% DV), vitamin C (45% DV), fibre (16% DV) and iron (10% DV).
