This course will be organized around weekly themes, designed to introduce students to a variety methodologies and topics within the field of food history, including taste and the senses; production, distribution, and consumption; diet and nutrition; foodways of religion, gender, and ethnicity; the rise of the restaurant and gastronomy; and, local and global food movements.\u00a0<\/p>\n\n\n\n<p>The format of this course will be an in-person three-hour block, with time devoted to lecture and group discussion.
