Current Research
Our laboratory is interested in the elucidation of the structures of food molecules and their functionalities. Our research focuses on the hydrodynamic properties of proteins and peptides obtained from by-products of food processing and studies how they can interact with other molecules, such as polyphenols and affect functional and biological activities of foods. Our Lab also investigates the role of antioxidant molecules on metabolic enzymes (e.g. lipase, amylase) and markers of metabolic diseases using cellular models and computational modelling.
