Potatoes (Solanum tuberosum L.) are a staple food crop where global consumption is increasing. Potatoes are economically important for Canada which produces approximately 4.8 million tones per annum and is the 5th largest exporter (>$1.7 billion/year).

Potatoes are grown in every province in Canada. Approximately 65% is destined for processing (frozen French fries, potato chips, and other dried products), 21% for fresh table consumption, and 14% for seed.

Potatoes contribute to a healthy diet. They contain high amounts of starch and protein, and are rich in minerals. A medium potato (148 g) provides an excellent source of potassium (21% DV), vitamin C (45% DV), fibre (16% DV) and iron (10% DV). Potatoes contain no fat or sodium.
