Research: Dr. Tsopmo investigates a number of research topics including a) the impact of novel human milk-derived antioxidant peptides on the reduction of neonatal oxidative stress, b) the bioavailability of micronutrients, c) the effects of oat protein hydrolysates and peptides on the management of weight, and markers of oxidative stress and d) bioactive phenols and peptides from cereal brans. His research on novel antioxidants and anti-inflammatories in foods determines the role of these compounds in the reduction of oxidative stress and the prevention of disease.
