Research: Dr. Hosseinian investigates natural antioxidants and anti-inflammatory in foods and their role in the delay of the onset of obesity. She does research on prebiotics/probiotics from agri-food byproducts/leftovers and explore their potential as source of nutraceutical and functional food ingredients. Her research topics include a) alkylresorcinols in cereal bran, b) melatonin in sour cherries (Prunus cerasus), and c) environmentally friendly extraction techniques for novel antioxidants and anti-inflammatories in foods.
